Golden Pompano

    Pompanos are marine fishes in the Trachinotus genus of the Carangidae family (known as jacks). Their appearance is deep bodied and mackerel like, typically silver colored and toothless with a forked tail and narrow base.   Pompano are found in warmer seas worldwide particularly in Indo-Pacific: Red Sea and East Africa (Ref. 3287) to the Marshall Islands and Samoa, north to southern Japan, south to Australia.  So far, twenty species have been identified and most are valued as seafood. Some species are considered prize delicacies and game fish.     In the Philippines, the pompano species that's being grown in fish farms is Trachinotus blochii (locally called pompano) or snubnose pompano.   Pompano is attractive, and this silvery skin is edible and does not require scaling. Pompano meat is firm, pearly white, has moderate fat content, with a sweet and mild flavor.    The marketable size for Pompano is 400 grams to 800 grams.
